Now he’s bringing the tastes of Africa to Wellington as part of the Flavours World Food Fair being held at the Town Hall on Saturday.
“It’s food from the jungle,” Darboe laughs, and he’s picked his menu of peanut butter beef curry, jollof rice, wild goat stew and a vegetarian stew called domoda, to reflect traditional foods eaten throughout Africa.
Darboe came to Wellington via Europe five years ago. One of the first things he noticed on his arrival here was there was nowhere he could go for traditional African food. So he began cooking himself, firstly for family and friends, and more recently at markets throughout the region.
Many of his ingredients are sourced in the traditional way also, he hunts them himself. His wild goat comes from weekly hunting trips in Eastbourne and in the hills around Featherston. Other ingredients he imports, often from Fiji, where he says many traditional African ingredients are grown.
Darboe will join other stall owners selling food from throughout the world at Saturday’s fair. Thailand, France, Malaysia, the United States, India, the Philippines, Italy, Korea, Indonesia, and of course whitebait fritters and pavlova from New Zealand, will all be represented. There will also be craft stalls, cultural performances, activities and contests for the children, and international rugby on the big screen.
